  • 150 g Sbrinz AOC, grated
  • 150g buckwheat flour
  • 150 g flour for dusting
  • 350 ml lukewarm milk
  • 2 eggs
  • Salt and pepper
  • Nutmeg
  • 400 g seasonal vegetables (carrots, zucchinis, cabbage, leeks, etc.)
  • 2 potatoes
  • 60 g butter
 

DIRECTIONS:

For dough: combine flour, milk, eggs, and spices.

Knead dough until smooth.

Allow to rest 30 minutes.

Trim vegetables and potatoes, wash, cut into slivers, and blanch in salted water. Remove from water and set aside.

Place the dough on a flat surface, cut into gnocchi, and drop into boiling vegetable broth to poach as they are ready.

When the gnocchi rise to the surface, add vegetables and potatoes. Reheat briefly.

Remove gnocchi and vegetables using a skimmer. Arrange in a vegetable dish and sprinkle with Sbrinz AOC.

Melt butter and pour over gnocchi.
